A Welcomed Mish Mash Dinner for Easter


Prime rib was on sale yesterday at my neighbourhood Loblaws, and my mind started turning as to what I will serve it with for Easter dinner tonight. I landed on grilled asparagus, couscous and a nice green salad for sides. How disappointed was I when I found out they had already sold out by noon. Not bothering to go to another store, I decided to find a good meat alternative and happily found some nicely marbled prime rib steak staring back at me.

It was a beautiful sunny day today at the park with family and friends. Returning home, a peek inside my fridge showed leftover broiled sweet potato and pasta from another night. That was perfect! What I had to do was broil the asparagus (drizzle of olive oil and sea salt), grill the steaks, sauté mushrooms and onions, toss a simple salad and heat up the leftovers, all in a matter of an hour. Although Easter dinner ended up being a mish mash of sorts and not a more formal dinner I had intended, I was delighted that things had changed to allow more time for the much-needed outdoors spending time with people I love rather than being at home minding a roast in the oven for several hours.
