Bring Something Homemade... In My Case, To a Kid's "Camp-out"


Sébastien's classmate Michael invited him and two other boys from class to his home for a lunch camp-out. Luckily, with the weather holding up they were able to set up camp in Michael's backyard. The kids were all super excited for today to arrive, and us mothers have been corresponding as to what foods we could bring to help out for lunch and snacks. They had the foods covered and I thought I could make a refreshing beverage. Strawberry lemonade came to mind and it worked out deliciously to quench their thirsts. Here's how to make it:

Strawberry Lemonade
Makes 9 cups for about 8 to 10 servings

3 cups strawberries, hulled
5 large lemons to yield 1-1/2 cups lemon juice
1 cup granulated sugar
5 cups cold water
3 cups ice cubes

Choose ripe strawberries and fresh lemons.
In a food processor, puree strawberries until chunky.

Juice the lemons to yield 1-1/2 cups of juice.
In medium pot, bring strawberries, lemon juice and sugar to a boil; 
simmer over medium-low heat for three minutes.


Strain through cheesecloth-lined sieve, pressing out liquid. Let syrup cool.
Make Ahead TIP: Store sealed in the fridge for up to one week. 

In serving pitcher, combine syrup with water; stir in ice to chill.  I asked Michael's mom to add the ice just before serving it. TIP: Garnish each glass with mint and strawberries if desired.
