Shaved Ice with Mango and Red Beans...


Don’t break a sweat over a hot summer day and chill out with this popular Taiwanese cold dessert. No need for any special equipment to make this simple home made shaved ice base. The wonderful combination of flavours and textures is a cool and refreshing treat for your senses!

Shaved Ice with Mango and Red Beans
Makes 4 servings

2 cups mango juice
3 cups water
2 ripe mangoes, diced
1 cup sweetened cooked red bean

¼ cup condensed milk

Cook's Note: Start with 1 cup red azuki beans. Wash the beans, cover with cold water, and soak overnight. Drain beans and discard water. Place beans in a small saucepan, add 3 cups cold water, and bring to a boil over high heat. Cover, reduce heat to medium-low, and simmer one hour, or until very soft adding 1/2 cup brown sugar during the last 15 minutes. Monitor the pan to make sure water doesn't dry up and add 1/3 cup water each time, stirring to ensure it doesn't stick to the bottom of saucepan. Drain and discard any water. Let cool completely.

Mix juice and water in a 8 X 8 pan. Cover and freeze for at least four hours.


Use a fork to rake the frozen juice into shaved ice. Divide into 4 dessert bowls. 
Note: This is the same way you would make a refreshing granita.


Top each bowl of ice with mango and red beans then drizzle with condensed milk. 


Deeeliciously icy fine!
